ravintola nokka was the meal i was most excited for in helsinki. they focus on sustainable and local ingredients based on traditional finnish cuisine.
whiskey; white negroni: lillet, gin, rye bitter.
amuse bouche: haddock fish cream.
house bread & butter.
moose tartar with spruce mayonnaise.
marinated baltic herring with rock weed and potato flat bread.
many of the ingredients and preparations were new to us since since i can’t say we’ve had any exposure to finnish food before. we learned a lot at the time as the dishes were brought out and explained.

my memory is very fuzzy all these months later, but i distinctly remember being wowed by the mains, both visually and gustatorily (yes, it’s a real word.. that i looked up).
